Five Minute Apricot Chicken

This garlic-seasoned chicken breast is lightly seared, and then topped with a creamy apricot and onion sauce.

Ingredients

  • Chicken breasts
  • 1 clove or 1 tsp chopped garlic
  • Salt & pepper, to taste
  • 1/4 tsp garlic pepper
  • 1/4 cup minced onion
  • 1-2 tbsp minced ginger
  • 1-2 tbsp rice wine vinegar
  • 1 cup apricot preserves
  • 1 tbsp butter
  • extra virgin olive oil
