In honor of Breast Cancer Awareness month, well be cooking up (or mixing) a simple Avocado, Corn and Tomato salad loaded with cancer-fighting ingredients. The zesty salad with its low calorie dressing, created by Food Network star Paula Deen, is perfect as a side dish with Mexican food or as a light snack paired with crackers.
Daily intake of fruits and vegetables has been shown to lower breast cancer risk in women. Avocado is a particularly potent fighter against cancer because it contains the antioxidant Glutathione, which promotes healthy cells that fight against cancer-causing free radicals. The creamy green fruit also supplies you with essential fatty acids, such as omega-3 and -6.
For a double dose of cancer fighting fruits, partner your avocado with cherry tomatoes, which contains lycopene, a carotene that not only gives the fruit its bright red pigment but has also been shown to inhibit the growth of cancer cells.
Ingredients:
1 avocado, cut into half inch cubes
1 pint of halved cherry tomatoes
2 cups of fresh or frozen cooked corn
cup finely diced red onion
