Why would you ever think something without sugar in it is diabetic unfriendly!!! Diabetics can eat any thing they dang well wish to, they just have to be judicious in their serving portions.Do not bother trying to make any food "diabetic friendly" because most of us when eating out or else where than our own kitchens make allowances in our medications and grams of carbohydrates to have a small taste of everything on the buffet or pot luck table. The doctors and all who are not diabetic, say to limit fats and salt, but they have nothing to do with diabetes. Rather they have maybe something to do with heart disease. I say maybe because there has been no difference in the percentage of heart patients in more than 50 years of not eating fats and salt.Make your salad the way you always do! Your friend can or may not eat it, depending on what else there is to eat.

I agree with Miz Lamb. Also I was wondering what else you planned to put in your 'diabetes-friendly' salad. Anything with pasta, rice, potatoes, bread will spike blood sugar. To me, a diabetes-friendly salad would have non-starchy vegetables and flavourful deli meats/cheese/olives. Fats do not raise blood sugar so I would have with it a nice home-made dressing made with good olive oil.

What is Type 1 Diabetes

Type 1 diabetes is when the body does not make enough insulin. Insulin is a hormone that helps your body convert food into energy. Without insulin, glucose (sugar) from the food you eat cannot enter cells. So glucose builds up in the blood. Your body tissue becomes starved for energy.

Type 1 diabetes usually begins in children and young adults. Over the long-term, if type 1 diabetes is not adequately treated, high blood sugar levels can damage the blood vessels, heart, kidneys, eyes, nerves, and other tissues or organs.
