Today, approximately 7.3 million Americans consider themselves to be vegetarian, a diet restricting red meat, poultry, or seafood. There are two types of vegetarians: vegans and vegetarians. A vegan is someone who doesn’t eat meat or any kind of animal products. Many people have a vegetarian diet because of concerns for animal rights, global warming, the environment, and for personal reasons.
The reasons for becoming vegetarian are as diverse as the reasons for not becoming one. Numerous studies have shown that animal products can increase the risk of obesity, heart disease, cancer, diabetes, cataracts, stroke, hypertension, and other life -threatening illnesses, while many vegetable foods protect against these same diseases. If you are a vegetarian, a lot of bad fats that can be consumed from meat would be avoided, yet special proteins only found in meats may be lacking. Vegetarians get lots of fiber, vitamins, minerals, and antioxidants that are found in fruits and veggies; but on the other hand, only consuming fruits and vegetables can make you lack certain nutrients that are abundant in meat. A vegetarian might miss meat and might not be getting enough protein. Lean meats, like seafood, help build muscle for a lean body and seafood is rich in healthy fats, like Omega-3, that is a very important part of nutrition. Other benefits include helping the environment, not contributing to terrible factory farming practices, increased energy, and faster food digestion. Perhaps the greatest benefit is much better overall health compared to the average American meat eater.
A true vegetarian diet consists of plant-based foods. Plant-based foods include vegetables, fruits, nuts, beans, herbs, spices, and grains. Vegetarians are known for eating tofu. Tofu is made from soybeans and water, and is very bland and plain. Different spices and flavors can be added to the tofu to improve the taste. Vegetarians eat grains, fruits, vegetables, some fungi, while some vegetarians also eat dairy and/or eggs. Many vegetarians take an iron, calcium, protein, and/or vitamin B12 supplement to make sure they’re getting the nutrients they need.

The word "but" is a FANBOYS word (for, and, nor, but, or, yet, so) and is a coordinating conjunction and should have a comma. Or just split the sentence into two sentences.
A vegetarian might miss meat and might not (get) enough protein.
