Fish Dishes
I'm looking for some creative dishes featuring fish. Any suggestions? I like dishes that are poached, broiled, baked, or grilled. I'm into spicy or citrus foods, too.
Lemon, dill salmon
Spray a baking dish with Pam, and put salmon fillet in dish. Melt a pat of butter and add 1 - 2 Tablespoons of fresh lemon juice. Pour over salmon and sprinkle with dill. I like putting very thin slices of lemon on top of the salmon. Bake for about 20 minutes at 350 degrees..Simple, quick and tasty.
Melt a soup spoon of butter
Melt a soup spoon of butter in a saucepan. Add 650-393 the fish, shrimp, mussels, garlic, onion and brandy. Light the brandy with a match. Then add a tea cup of water, the peeled, seeded, chopped tomatoes; salt and bay leaves. Cover and boil 8 to 10 minutes.
Remove the fish, shrimp and mussels from the saucepan and place in a terrine or glass casserole dish, and keep hot.642-892
Slowly reduce the sauce that is left in the saucepan. In another bowl make a paste with the remaining butter and the flour, dilute with a little sauce, then pour into the saucepan. Mix. Add the chopped parsley, some pepper and stir again. Pour it all into the casserole dish over the fish. Serve at once.
Fish in paper
I tried this the other day for the first time. It was great! Into a large piece of greased baking paper place a white fillet of fish (firm textured fillet is preferred), top with cut baby tomatoes, chopped spring onion, red capsicum, small amount of sliced black olives and shredded basil leaves which have been quickly stirfried in light olive oil. Add a squeeze of lemon juice over the top of the veges once on top of the fish, season with cracked pepper and seasalt. Close up fish parcel, tight, with kitchen twine. Bake in fan forced oven at 200 C degs for approx 10 mins (depending upon the thickness of fish). Make individual parcels for other family members. Easy and very healthy! (If liked cook with potato wedges which have been cooking in the oven) or any other carb if desired.

Bake or broil fish. baking takes a little more time. before putting in the oven, chop up 1 tbspn of orange with sking and squeeze a little lemon juice on it. If cooking just one or two servings, broil it for about ten minutes. If cookinf for more people bake for about thirty mins. This is so delicious you can cut out salt! I usually like this with rice but you can make noodles in chicken broth sprinkled with a little cheese. I do the rice his way too. Along with a salad or some steamed veggies this is a great meal!
This one is super easy but
This one is super easy but delcious and healthy. Take a skinless salmon filet, cut into serving size pieces, and dip it in milk then in a plate of sesame seeds. (try to cover a much of the fish surface as possible.) Heat one teaspoon of oil in a pan (I like a cast iron skillet) over medium heat, then cook the salmon for about 12 minutes, flipping halfway through. The fish is done when it flakes easily. When they were youngers, our kids loved this!
