Heres a vegetarian dish you won't have to talk anyone into eating.
Spaghetti squash is baked until just a slight crunch is left. After scraping out the strands, saute them with butter, garlic, and herbs. Top the dish with Parmesan cheese or go the healthier Emeril Lagasse route, which skips the Parmesan altogether.
Spaghetti squash, like all winter squashes, has been shown to promote blood sugar regulation and prevent type 2 diabetes.
Ingredients
- 1 small spaghetti squash (about 3-4 pounds)
- 2 tablespoons butter
- 2 cloves garlic, finely minced
- 1/4 cup finely minced parsley (or basil)
- 1/2 teaspoon salt (or to taste)
- 1/4 cup shredded parmesan cheese
