Hummus is a staple item on many Middle East tables, and served with pieces of pita bread, the mix makes a pleasant midday snack or healthy item for the cocktail tray.
Ingredients:

8 ounce can garbanzo beans, rinsed (reserve 2 teaspoons liquid) 1-1/2 teaspoons sesame tahini 2 garlic cloves, minced 1-1/2 teaspoons lemon juice 1/2 teaspoon olive oil 1/2 teaspoon cumin 1/2 teaspoon coriander 1/4 teaspoon cayenne pepper 1 teaspoon parsley, minced
Place all ingredients in a blender. Blend until smooth. Add bean liquid to moisten, if necessary. Refrigerate covered for at least two hours. Pour another tablespoon of olive oil over the set mixture along with some parsley for effect. Serves 8.
