Muffins can be excellent high-energy fast foods if they're low in fat and sugar. The problem is, typically packed with oil and sugar, healthy muffins can be harder to find than hens' teeth.
Chef Mary-Jo Fetterly of Mountain Trek Fitness Retreat & Health Spa in Ainsworth Hot Springs, Canada, offers the following tasty -- and healthy -- muffin recipe for you to try.
Moist Raisin Sunny Muffins
You'll need:
1 cup rolled oats
1 cup plain yogurt
1 cup unbleached organic flour
1/3 cup sunflower seeds
1/2 cup Thompson raisins
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup brown sugar
1 egg
1/4 cup oil or melted butter
The method:
1. Soak the oats in the yogurt for at least 20 minutes.
2. Combine all the dry ingredients in a medium-sized bowl and stir well.
3. Add the oil and the egg to the oats, stirring to incorporate.
4. Make a well in the dry ingredients and add the wet ingredients. Fold four to five times to mix.
5. Spray a muffin tin with cooking spray and then line with paper cups. Fill the cups three-fourths full.
6. Bake at 375 F for 20 minutes.
Content: 205 calories per muffin; 6 grams protein; 8 grams fat.
