Japanese Cucumber Salad with Rice Vinegar and Chili Flakes

For a light salad, try this ultra easy Japanese-inspired sunomono.

Mix rice wine vinegar, mirin, sugar, salt and chili flakes for a sour and sweet dressing. Toss the sliced cucumbers with the sauce. Refrigerate overnight for maximum absorption.

Cucumbers are an easy way to increase your consumption of both fiber and water. They've also been shown to be good for your skin.

Ingredients

6 tbsp rice wine vinegar
2 tbsp mirin (sweet rice wine vinegar)
1 tbsp sugar
1/2 tsp Kosher salt
1/8 tsp dried chili flakes
4 cups Japanese cucumbers - can substitute with a 1/2 long English cucumber
