Healthy Garlic Potatoes

You have to love the versatile potato. Served cold in a salad, mashed and topped with gravy or pureed into an icy soup, the variations are endless. Here's a healthy tip for delicious Garlic Potatoes.

Ingredients:


1-1/2 pounds potatoes, peeled and cut into thin wedges
1 tablespoon olive oil
3 garlic cloves, crushed
1-1/2 teaspoons rosemary, chopped
1-1/2 teaspoons parsley, chopped
1/2 teaspoon mustard
1 tablespoon lemon juice


Place potatoes on baking trays coated with nonfat nonstick cooking spray. Bake at 375 degrees Fahrenheit for 30-35 minutes. Combine next six ingredients in a bowl. Stir in potatoes and toss until coated. Spray potatoes with nonfat nonstick cooking spray and return to oven about 4-5 inches from heat element. Broil eight to 10 minutes, stirring occasionally. Serves eight.
