Mocha-Almond Delicious Dessert!

Whatever the occasion -- from an outdoor gathering to a fall picnic or football game -- almonds have been perfect for entertaining ever since the early days of Greece, Rome and India. A study published in the November 2003 issue of the International Journal of Obesity showed that eating a moderate-fat diet including a daily ration of almonds resulted in more weight loss than eating a low-fat diet -- when both diets' calorie counts were the same.

Mocha-Almond Ice Milk
To roast slivered almonds: Spread in an ungreased baking pan. Place in 350 F oven and bake 5 to 6 minutes or until golden brown and fragrant; stir once or twice to assure even browning. Note that almonds will continue to roast slightly after removing from oven.
Whisk together 1/2 cup soy milk and instant coffee or espresso powder to dissolve powder completely. Whisk in remaining soy milk and sugar to taste. Let sugar dissolve, and then freeze according to ice cream machine's instructions, adding almonds when mixture is nearly frozen. Or, divide mixture among waxed paper cups and cover each with plastic wrap; poke a wooden craft stick through plastic and freeze to serve as pops. Serves 6.
