Healthy Chocolate Muffins Recipe

Ingredients

  • 3/4 cup whole wheat flour
  • 1 cup all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 1 1/2 bananas
  • 2 eggs
  • 1 cup coffee (decaffeinated or regular)
  • 1 cup nonfat milk
  • 1 teaspoon vanilla extract

    Method
    Sift together the cocoa powder, baking powder and baking soda. Pure the sugar, bananas and eggs. Mix the sifted ingredients with the rest of the dry ingredients. Combine the coffee, milk and vanilla extract with the banana pure mixture. Add the wet and dry mixtures together. Spray a nonstick muffin pan with vegetable oil and bake at 300 degrees for about 15-20 minutes. Test for doneness by pushing on the top of a muffin -- it should spring back. Cool for 20 minutes.
