Ingredients

  • 1 pound cubed red potatoes (about 4 cups)
  • 6 sliced radishes (about 1/2 cup)
  • 1/4 cup green onions, finely chopped
  • 1/4 cup nonfat plain yogurt
  • 2 tablespoons nonfat mayonnaise
  • 1 1/2 teaspoons Dijon mustard
  • 2 teaspoons chopped fresh dill
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon white pepper

    Method
    Place potato cubes in a medium saucepan; cover with water and bring to a boil. Cover, reduce heat and simmer 12-15 minutes or until potatoes are tender. Drain and let cool.

    Mix dressing ingredients together (nonfat plain yogurt through white pepper). Combine potatoes, radishes and green onions with dressing. Cover and chill.
