Three Herb Pesto Recipe

Ingredients

  • 1 pound medium tofu
  • 2 ounces pinenuts
  • 1 cup basil
  • 1/2 cup parsley
  • 1 cup green onions
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice
  • 1 tablespoon garlic
  • Pinch of salt

    Method
    Combine all ingredients in a Cuisinart and blend until smooth. Use as you would regular pesto except do not bring to a boil, as the tofu will separate.
