ABC's Good Morning America presents this "Hungry Girl" recipe for slimmer crisp vegetarian egg rolls.
Combine cole slaw, onions, bean sprouts, pineapple and water chestnuts. After seasoning the mixture with low-sodium soy sauce, wrap it in egg roll wrappers. Bake until golden brown.
These non-fried egg rolls are healthier finger foodsperfect for Superbowl Sunday.
Ingredients
- 2 and 1/2 cups dry cole slaw mix
- 1 cup chopped onion
- 1/2 cup chopped bean sprouts
- 1/2 cup chopped celery
- 1/2 cup canned pineapple packed in juice, drained and chopped
- 1/2 cup canned sliced water chestnuts, drained and chopped
- 1/4 cup reduced-sodium/lite soy sauce
- 2 tablespoons chopped garlic
- Salt and black pepper, to taste
