Slimmer Vegetarian Egg Rolls with Pineapple

ABC's Good Morning America presents this "Hungry Girl" recipe for slimmer crisp vegetarian egg rolls.

Combine cole slaw, onions, bean sprouts, pineapple and water chestnuts. After seasoning the mixture with low-sodium soy sauce, wrap it in egg roll wrappers. Bake until golden brown.

These non-fried egg rolls are healthier finger foodsperfect for Superbowl Sunday.

Ingredients

  • 2 and 1/2 cups dry cole slaw mix
  • 1 cup chopped onion
  • 1/2 cup chopped bean sprouts
  • 1/2 cup chopped celery
  • 1/2 cup canned pineapple packed in juice, drained and chopped
  • 1/2 cup canned sliced water chestnuts, drained and chopped
  • 1/4 cup reduced-sodium/lite soy sauce
  • 2 tablespoons chopped garlic
  • Salt and black pepper, to taste
  • 12 large square egg roll wrappers (often stocked near the tofu in the fridge section of the market
