In this video, home cook Tracy Porter show you how to make a delicious quinoa tabbouleh. Quinoa is an ancient amino-acid rich grain that has significant cardiovascular benefits for postmenopausal women, such as contributing to healthier blood circulation and blood vessels.
This healthy salad is packed with protein and fresh vegetables, including edamame, grape tomatoes, pecans and cucumbers.
Ingredients
- 1 cup quinoa (will make 3 cups when cooked)
- 2 cups chicken broth or stock
- 1 cup chopped parsley
- cup chopped scallions
- 1 cucumber, seeded and chopped
- 1 cup grape tomatoes
- 2 cups frozen edamame (cooked per package directions)
- cup chopped pecans
- 1 cup feta cheese, to sprinkle over top of salad
Vinegarette Dressing
- cup olive oil
- 1 garlic clove, minced
- salt and pepper to taste
- cup lemon juice
