Hoppin John Recipe: Healthy New Year's Day

  • 1 lb cooked turkey sausage
  • 1 (15 oz) can black-eyed peas, drained
  • cup diced onion, sauted
  • 1/.4 cup diced celery, sauted
  • 1 cups chunky salsa
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper or 1 tsp hot sauce (optional)

(Vegetarian) Barley Hoppin John

This southern classic gains some great texture and protein by replacing the rice with barley.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 small red bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 14-ounce can vegetable broth
  • 1 cup quick-cooking barley
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried
  • 2 teaspoons lemon juice
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 2 15-ounce cans black-eyed peas, rinsed
