The coloring of leaves, the light breeze and the shorter daysmake no mistake about it, autumn is here. And what better way to welcome the early winter chill this year then by sitting next to the warm fireplace with a hot bowl of butternut squash and pear soup in your hands?
This lovely fall soup from About.com is best served as an appetizer or nice warm-up snack after a cold day out in the coming winter season.
Ingredients:
- 2 tsp olive oil
- 1 cup finely chopped onion
- 1 tbsp curry powder
- 1 pound butternut squash
- (about half a medium squash), cut into 1-inch pieces
- 2 ripe medium Bartlett pears, peeled, cored and cut into 1-inch pieces
- 3 1/2 cups fat-free, low-sodium chicken or vegetable broth
